Phyto-estrogens are estrogenic plant substances, including isoflavones. These molecules are very present in
soy, consumption of which is increasing in France. We will examine their effects in vitro, in animals and in humans, their toxicology and the opinions of health agencies. We
show how to limit consumer exposure to these endocrine disruptors.
